Rhubarb and Herb Kombucha Recipe

Rhubarb and Herb Kombucha Recipe


  • 2 Rhubarb Stalks (leaves discarded)
  • 1 Whole Sprig Basil (4-inch)
  • 1.5 tspn Mint Leaves
  • 3 Cups Kombucha
  • 1 tbsp Sugar (Optional)


  1. Make an unflavoured standard kombucha following our recipe.
  2. Mix rhubarb, herbs (mint and basil) and sugar (optional) using a food processor until a mash is formed – should be somewhat damp.
  3. Pour mix into a jar or container.
  4. Pour in unflavoured kombucha into the container or jar with the rhubarb and herb mix.
  5. Cover the jar or container.
  6. Let the mixture ferment for 2-3 days or longer, depending on personal preference, at room temperature to allow flavour to infuse.
  7. Strain after fermentation process and serve.
  8. Add ice when serving. (Optional)

Tip: For a fizzier kombucha, leave more room at the top of the jar during fermentation and let it sit for longer at room temperature.
